Red Wine Plum Cobbler

This combination of plums and red wine is exquisite and fragrant so the dessert itself is perfect to end a special dinner on a high note. Yields: 1 9-inch square pan Ingredients: 2 pounds red and black plums, pitted and sliced 1 apple, peeled, cored and sliced juice from 1 orange 1 teaspoon orange zest 1/2 cup red wine 1/2 teaspoon cinnamon 2 tablespoons cornstarch 4 tablespoons sugar 1 cup all purpose flour 1/4 cup whole wheat flour 1 teaspoon baking powder 1 egg 1/2 cup buttermilk 1 oz melted butter 1 pinch of salt Directions: Mix the plums with the apple, orange juice and zest, red wine and cinnamon in a bowl. Add the cornstarch and sugar and mix well. Transfer into a 9-inch deep dish square pan. To make the topping, mix the flours with the baking powder and salt in a bowl. Add the egg, butter and buttermilk at once and mix until well combined. Drop spoonfuls of batter over the fruits. It doesn’t have to be even so don’t bother with spreading it evenly over the fruits. Bake in the preheated oven at 350F for 40-50 minutes or until the fruits are tender and the topping is golden brown and the edges are bubbling with fruits juice. source
